Black and Brown Burritos

Ingredients

  • 1 Tbsp vegetable oil
  • 1 onion
  • 2 garlic cloves, minced
  • 1 tsp chili powder (or more!)
  • 1/2 tsp cumin
  • 3 cups brown rice, cooked (1 c. uncooked)
  • 16 oz. can black beans, rinsed and drained
  • 1 can corn, rinse and drained
  • tortillas
  • cheddar cheese
  • sour cream
  • salsa

Directions

  1. Add onion, garlic, chili powder and cumin to heated oil. Cook until onion is soft. Add rice, beans, corn and heat through. Fill tortillas with mixture, cheese, sour cream, salsa.
