Roasted Vegetable Dressing

Ingredients

  • 1 tablespoon chopped fresh thyme (or 1 tsp dried)
  • 1 tablespoon chopped fresh rosemary (or 1 tsp dried)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • salt and freshly ground black pepper
  • Vegetables to fill green rectangular Le Creuset dish, such as squash, zucchini, baby carrots, potatoes, asparagus

Directions

  1. eheat oven to 400.

  2. Place vegetables in lightly oiled baking dish.

  3. Mix dressing ingredients and pour over vegetables.

  4. Bake uncovered for 35 minutes.

  5. Sprinkle a little balsamic vinegar over top before serving.
