Sautéed Chicken with Mushroom Sauce

This is very much like a chicken stroganoff. I sometimes add a little Worcestershire to the sauce.

Ingredients

  • 4 chicken breasts
  • 1/4 t. salt
  • 1/2 t. pepper
  • 2 T. oil
  • 8 oz. cremini mushrooms, sliced
  • 1/2 C. onion, finely chopped
  • 1 minced garlic clove
  • 1 T. flour
  • 1 C. chicken broth
  • 1 t. Dijon mustard
  • 1/4 C. sour cream
  • 8 oz. egg noodles

Directions

  1. Sprinkle chicken with salt & pepper. Heat oil in a skillet; sauté chicken for about 5 minutes each side until golden on the outside and no longer pink in the middle. Remove from skillet, cover and keep warm.

  2. Add mushrooms, onion and garlic to skillet and sauté until tender. Whisk in flour and cook for 1 minute; add broth. Cook until bubbly and thickened, about 3 minutes. Add chicken back to skillet and cover, simmering until chicken is cooked through. Stir in mustard and sour cream, and cook until heated through, about 2 minutes more.

  3. Cook noodles according to package directions. Serve with chicken breast on noodles and sauce over all.
