Soup Lentil Vegetable

Ingredients

  • 2 teaspoons Olive Oil
  • 2 cloves crushed Garlic
  • 2-3 sticks of celery chopped finely
  • 3/4 cup red lentils
  • 5 cups of water
  • 3 large chicken cubes
  • 2 bay leaves
  • 1 can crushed tomatoes (or supreme)
  • 4 teaspoons Tomato Paste
  • Chopped parsley to garnish

Directions

  1. Heat oil in large saucepan

  2. Cook garlic, onion, carrot, and celery to soft

  3. Stir in lentils, water, stock, bay leaves, tomatoes and paste.

  4. Bring to boil, then simmer covered for about 20 mins or until lentils are soft.

  5. Discard bay leaf. Sprinkle with parsley just before serving.

  6. Note: If soup is too thick, just add a little more water and a little more paste or a cube if necessary.
