Soft Oatmeal Cookies

These are very soft. Perhaps a little bit too much? My one year old kept crumbling them!

Serves 4 people

Ingredients

  • 1 c. seedless raisins
  • 1 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. nuts, chopped
  • 2 c. oatmeal

Directions

  1. Cover raisins with water & boil 8 minutes

  2. Drain and save liquid

  3. Cream shortening and sugar.

  4. Add eggs.

  5. Add dry ingredients, plus five tablespoons raisin liquid to creamed mixture.

  6. Stir in raisins, nuts and oatmeal.

  7. Drop from teaspoon on greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.
