Aunt Dorothy’s Buttermilk Doughnuts

Ingredients

  • 3 eggs, beaten
  • 2 cups sugar
  • 1-1/2 cups warm mashed potatoes
  • 1 cup buttermilk
  • 1/3 cup butter, melted
  • 6 cups flour
  • 4 tsp baking soda
  • 1 tsp salt
  • 1 tsp nutmeg

Directions

  1. Add sugar to eggs; beat well. Stir in potatoes, butter, and buttermilk. Add dry ingredients and mix only until flour is moistened. Chill dough for at least 1 hour.

  2. Roll 1/3 at a time on a floured surface to 1/2 inch. Cut with doughnut cutter. Let rest 15 minutes. Fry in hot grease until brown; put on paper towels and roll in sugar and cinnamon.

  3. Dough can be kept in the refrigerator up to 1 week before frying.
