Pinwheel Spinach Meatloaf

Serves 4 people

Ingredients

  • 1lb ground beef
  • 1/2 lb pork
  • 1 cup shredded cheese
  • 1/2 cup bread crumbs
  • 1 egg beaten
  • 2 tbsp worcestershire sauce
  • pepper
  • Filling:
  • 1 pkg spincach cooked and drained (frozen kind)
  • 1/2 cup butter
  • 1 cup chopped mushrooms
  • 1/2 cup chopped onion
  • 1/4 cup fresh parsley
  • 1/2 cup bread crumbs
  • 1 egg

Directions

  1. Filling:

  2. Cook spinach and set aside

  3. Saute onions and mushrooms until clear then add all ingredients to spinach and mix well

  4. Meat:

  5. Combine beef, pork, cheese, bread crumbs, egg, worcestershire and mix well.

  6. Flatten mixture out into thick rectangle so when rolled it will fit loaf pan.

  7. Spread spinach mixture evenly over meat leaving 1/2 inch border.

  8. Roll up meat and bake at 350F for approximately one hour
