Easy (and YUMMY) Enchiladas

Ingredients

  • 1# hamburger
  • Can of sliced olives (big or small, depending on how much you like olives)
  • 1/2-1 onion, diced
  • 1 Packet enchilada seasoning
  • 1 Can tomato sauce
  • Tortillas (we love the raw ones from Costco)
  • Grated cheese (as desired)
  • Sour cream (as desired)

Directions

  1. Brown hamburger with onions and olives. Prepare enchilada seasoning as directed on package. Pour sauce into a deep plate and coat each tortilla on both sides. Place open in a (sprayed) 9×13 pan. Spoon in meat mixture, sprinkle on cheese, and spoon in sour cream. Roll up tortilla and place seam-side down in pan. Reapeat with all tortillas. Pour any remaining sauce over enchiladas, as well as any more cheese, and another dollop of sour cream (this helps to delineate a full pan!). Cover pan with foil and bake at 350˚f for 35 minutes.
