Caramelized Onions

For Carmela’s Rigatoni use 2 servings

Ingredients

  • For 1 serving:
  • 1/2 tablespoon butter
  • 1/2 tablespoon extra virgin olive oil
  • 1⁄2 medium to large yellow onion, thinly sliced
  • a couple dashes salt
  • a couple dashes pepper , freshly ground
  • 1/2 teaspoon sugar
  • For 2 servings:
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • 1 medium to large yellow onion , thinly sliced
  • several dashes salt
  • several dashes pepper , freshly ground
  • 1 teaspoon sugar
  • For 4 servings:
  • 2 tablespoons butter
  • 2 tablespoon extra virgin olive oil
  • 2 medium to large yellow onions , thinly sliced
  • 1⁄8; teaspoon salt
  • 1⁄8; teaspoon pepper , freshly ground
  • 2 teaspoons sugar

Directions

  1. In a large skillet, melt the butter in the olive oil over medium-high heat.

  2. Add the onions, the salt and pepper.

  3. Cook, stirring constantly, until the onions begin to soften, about 5 minutes.

  4. Stir in the sugar and cook, scraping the browned bits off the bottom of the pan frequently, until the onions are golden brown, about 20 minutes.
