Berry muffins

Especially good for diabetics
I’ve tried them with different berries
They freeze well

Prep time: 10 minutes
Cook time: 15 minutes

Ingredients

  • 2t baking powder
  • 1/2 t baking soda
  • 21/2 c flour
  • 1/2t salt
  • 3/4 c GFS pecan meal
  • 1 c plain yoghurt (or same fruited kind)
  • 2 eggs
  • 1/2 c oil
  • 1/2 to 1 c berries

Directions

  1. Mix dry ingredients.

  2. Stir in eggs, yoghurt and oil and stir until blended. Gently fold in berries. Fill in well-greased muffin tins 2/3 full. Bake @ 400 degrees for 15-20 minutes.

  3. Makes 12-16 muffins.
