Porcupine Balls

You can “play” with the seasonings. I sometimes add worchestershire, red pepper flakes, onion and/or garlic salt…etc.

Prep time: 15 minutes
Cook time: 40 minutes
Serves 4 people

Ingredients

  • 1 # hamburger
  • 1 - 1&1/2 cups rice (not instant)
  • 1 can tomato sauce
  • 1t baking soda
  • 6 servings mashed potatoes (real or instant)
  • salt
  • pepper

Directions

  1. Pour tomato sauce plus one can of water into a sauce pan. Stir in baking soda. Put over med-high heat. Mix together hamburger, rice, salt, and pepper, and form into aproximately 2’’ balls. Place in saucepan. Bring to a boil. Reduce heat to low and simmer for about 40 minutes. (Watch out — they love to boil over!) In the meantime, make potatoes. Serve meatballs and sauce over potatoes.
