Caramelized Onion Grilled Cheese Sandwich

Found in a magazine in the 90’s. These are yummy. You can easily switch out the bread and cheese type for your favorite.

Cook time: 35 minutes
Serves 4 people

Ingredients

  • 3 T butter, softened
  • 1 large sweet onion, sliced and separated
  • 1 t brown sugar
  • 8 slices pumpernickel bread
  • 4 T ground mustard or spicy brown mustard
  • 8 slices Muenster cheese

Directions

  1. Over medium-high, melt 1 tablespoon of butter in a 12-inch nonstick skillet. Add the onion; cook stirring for 3-5 minutes, until tender. Reduce to medium-low heat, adding in the brown sugar.

  2. Cook until onion is glazed and golden, around 20-25 minutes, stirring occasionally.

  3. While cooking the onions, spread mustard over the 8 slices of bread; place cheese slice on each piece of bread.

  4. Spoon the onion mixture evenly over 4 bread/cheese slices. Place other bread/cheese slices on top. Spread tops of sandwiches with 1 tablespoon of butter.

  5. Using a griddle pan over medium-low heat, place 4 sandwiches buttered side down. Spread remaining butter on other sides. Cook until cheese has melted, about 4 minutes per side.
