Chocoate Cream Pie

Ingredients

  • 1-1/2 cups sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 3 cups milk
  • 4 egg yolks, slightly beaten
  • 2 tsp vanilla
  • 2 oz. unsweetened chocolate, cut up

Directions

  1. Mix sugar, cornstarch, and salt in saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Add chocolate, boil and stir 1 minute. Temper the egg yolks and put in pan. Boil and stir 1 minute; remove from heat. Add vanilla. Pour into baked pie shell. Press plastic wrap onto filling and cool. Top with sweetened whipped cream.

  2. (To make a coconut cream, use only 2/3 cup sugar, 1/4 cup cornstarch. Add 2 Tbsp butter and 3/4 cup coconut with your vanilla.)
