Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 tablespoons butter, chopped
  • 1/2 cup flour
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 pound white cheddar cheese, grated
  • 1/2 pound white American cheese, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 box Barilla Whole Grain Rotini pasta

Directions

  1. In a large pot over medium heat, saute the bell peppers in olive oil until tender, about 5 – 7 minutes.

  2. Add butter. When melted whisk in the flour until it forms a thick paste.

  3. Slowly whisk in the milk and cream.

  4. Allow the sauce to heat for 10 minutes or until it begins to bubble.

  5. Reduce the heat to medium-low and stir in the cheeses, salt and pepper.

  6. Prepare the pasta as directed on the package, strain and stir into the sauce.

  7. Serve immediately.
