Sandkaker

Ingredients

  • 1 1/8 cup butter at room temperature
  • 1/2 c sugar
  • 1/2 c ground almonds
  • 1 egg
  • 3 cups flour

Directions

  1. Preheat oven to 180 degrees C. ( 350 degrees F)

  2. Cream the butter and sugar very well.

  3. Add egg, ground almonds and flour, working the dough quickly until it comes together.

  4. Cover with plastic wrap and chill in the fridge for an hour.

  5. Butter the Sandkaker forms and sprinkle with flour.

  6. Divide the dough into 4 parts, rolling each into a sausage shape and cutting each one into 12 pieces.

  7. Roll each piece into a ball and press into the form. (It should look like a miniature pie base.)

  8. Set the forms onto a baking tray and bake in the middle of the oven for 12 to 15 minutes.

  9. When they are baked, place them upside down onto a cooling rack. When they are cold they will have slipped out of the forms which can be lifted off.

  10. In modern recipe books it is often suggested they are filled with a little pastry cream, whipped cream and/or jam.
