Rosemary & Lime Chicken

Ingredients

  • 1/4 cup vegetable oil
  • 2 pounds chicken breasts
  • 1/2 cup chicken broth
  • Grated rind and juice of one lime
  • 2 cloves of garlic, minced
  • 1/4 tsp. ground ginger
  • 1/2 tsp. rosemary, crumbled
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Brown chicken in vegetable oil, turning once or twice.

  2. Add broth, lime juice, grated rind, ginger, garlic, rosemary, salt and pepper.

  3. Cover; reduce heat to low and simmer 25 minutes.

  4. Skim fat and serve with pan juices.
