Tex-Mex Rice

Ingredients

  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 T. olive oil
  • 1 cup rice
  • 2.5 cups vegetable broth
  • 1/4 tsp. pepper
  • 1.5 tsp. cumin
  • 1 red bell pepper, chopped

Directions

  1. Saute onions and garlic in olive oil.

  2. Add rice and saute until rice is lightly browned.

  3. Add vegetable broth and spices. Bring to boil.

  4. Reduce heat and simmer for 20 minutes.

  5. Remove from heat and stir in peppers.

  6. Allow to stand for 5 minutes.
