Waikiki Meatballs

Simple, tasty sweet and sour meatballs

Serves 6 people

Ingredients

  • 1 1/2 pounds ground beef
  • 2/3 cups bread or cracker crumbs
  • 1/3 cup minced onion
  • 1 egg
  • 1 1/2 teaspoon salt start with less
  • 1/4 teaspoon ginger
  • 1/4 cup milk
  • 1 tablespoon to brown in pan
  • 2 tablespoons cornstarch
  • 1/2 cup brown sugar (packed)
  • 1 can (13 1/2 oz)pineapple tidbits,drained (reserve syrup)
  • 1/3 cup vinegar
  • 1 tablespoon soy sauce
  • 1/3 cup chopped green pepper (optional)

Directions

  1. Mix meat, crumbs, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfulls into metballs. Melt shortening in large skillet or in large microwave proof dish. Cook meatballs. Remove meatballs; keep warm, remove fat.

  2. Mix cornstarach and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Cook in microwave or in the skillet over medium heat, stirring constantly, until mixture thickens and boils. Boil one minute. Add meatballs, pineapple tidbits and green pepper; heat through.
