Ground Beef and Noodle Casserole

Good casserole…adding the cottage cheese helps make it creamy.

Prep time: 15 minutes
Cook time: 45 minutes
Serves 6 people

Ingredients

  • 8 oz. egg noodles
  • 1 T. oil
  • 4 oz. mushrooms, sliced
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 lb. ground beef
  • 1 t. salt
  • 1/4 t. pepper
  • 1 can diced tomatoes
  • 8 oz. tomato sauce
  • 1 C. creamed cottage cheese
  • 1 C. sour cream
  • 1/2 C. green onions
  • 1 C. grated sharp cheese

Directions

  1. eheat oven to 350. Spray casserole dish with cooking spray.

  2. Cook noodles according to directions; drain.

  3. Sauté mushrooms, onion and garlic in oil; add meat and brown. Add salt, pepper, diced tomatoes and tomato sauce. Simmer about 10 minutes.

  4. In a large bowl, combine noodles, cottage cheese, sour cream and green onions. Add beef mixture and mix well. Pour into prepared baking dish; top with grated cheese. Bake at 350 degrees for 30 minutes.
