Gazpatcho

Ingredients

  • 1 cucumber
  • 1 green pepper
  • 3 tomatoes, peeled
  • 1 c celery
  • 1/2 c green onion
  • 2 avocados
  • 4 cups tomato juice
  • 5 T red wine vinegar
  • 4 T olive oil
  • 2 t salt
  • 1/2 t pepper

Directions

  1. Mix all ingredients together and let flavors blend in refrigerator over night.
