Squash Casserole

Serves 6 people

Ingredients

  • 2 cups cooked squash mashed
  • 6 T butter (I use 3 T)
  • 2 eggs
  • 1 t salt
  • 1/2 t pepper
  • 1 cup chopped onion
  • 1 cup grated extra sharp cheed
  • 1 cup evaporated milk
  • 2 cups crackers crumbled in tube

Directions

  1. Cook squash in small amount of salted water until tender. Drain and mash.

  2. Melt butter.

  3. Combine remaining ingredients with squash except crackers.

  4. ur into greased baking dish 9×13.

  5. Cook at 375 degrees for 40 minutes.
