Apple Muffins

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cup flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup grataed apples

Directions

  1. Grease bottoms of muffin cups. Beat eaff with fork. stir in milk, oil and apples. sift dry ingredients together. Blend in dry ingredients; stir just until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full. top with nut crunch topping. mix 1/3 cup brown sugar (packed), 1/3 cup broken nuts and 1/2 teaspoon cinnamon. Sprinkle on top of muffins. Bake 20 to 25 minutes or until golden brown at 400 degrees.
