Crab & Artichoke Quesadillas

Cook time: 10 minutes
Serves 6 people

Ingredients

  • 1/2 c parmesan, grated
  • 1/2 c mayo
  • 1 can artichokes, chopped
  • 4 1/2 tsp roasted red peppers, chopped
  • 1 clove garlic, minced
  • 6 flour tortillas, 10"
  • 1 c cooked crab
  • 1/2 c mozzarella, shredded

Directions

  1. In small bowl, combine 1st five ingredients.

  2. Spread over 3 tortillas.

  3. Top with crab and mozzarella other tortillas.

  4. Press down slightly.

  5. On griddle with non-stick spray cook over medium heat for 2 minutes on each side or until cheese is melted.

  6. Cut into 6 wedges.
