Sally’s Potato Salad

My most requested recipe. This is a double recipe so it can be halved for a smaller group.

Cook time: 25 minutes
Serves 10 people

Ingredients

  • 5-6 large red potatoes
  • 2 C. Hellmann's Mayonnaise
  • 1/4 C. white vinegar
  • 3 t. salt
  • 2 t. sugar
  • 1/2 t. pepper
  • 4 ribs celery, thinly sliced
  • 1 large onion, diced
  • 5 hard-cooked eggs, chopped

Directions

  1. Put potatoes into large saucepot, cover with water; bring to a boil over medium-high heat. Reduce heat and simmer 23-25 minutes or until potatoes are fork-tender. Drain and cool slightly.

  2. In a small bowl, whisk together the Mayonnaise, vinegar, salt, sugar and pepper.

  3. Peel and cube potatoes. In a large bowl, combine potatoes, celery, onion and eggs. Pour dressing over and mix well. Refrigerate for several hours for flavors to blend.
