Crockpot Chicken Chili

I have adapted this recipe for the crockpot. It makes a lot and freezes well.

Serves 8 people

Ingredients

  • 1 lb. cooked chicken breast, shredded
  • 2 onions, coarsely chopped
  • 4 cloves garlic, minced
  • 1 qt. chicken stock
  • 2 cans mild diced green chiles
  • 2 t. ground cumin
  • 2 t. dried oregano
  • 2 t. salt
  • 1 t. cayenne pepper
  • 6 cans great Northern beans, un-drained
  • Monterey Jack cheese
  • Sour cream
  • Minced onion
  • Tortilla chips

Directions

  1. In a large bowl, mix the chicken, onions, garlic chicken stock, green chiles, cumin, oregano and cayenne pepper.

  2. Pour into 5-6 quart crockpot. Cook on low for 6 hours stirring after 4 hours and tasting for seasoning. Adjust if necessary and mash a little with a potato masher to thicken.

  3. Ladle into individual bowls and top with the cheese, sour cream, onion and/or tortilla chips.
