Chocolate Pancakes

Ingredients

  • 1 2⁄3 cups all-purpose flour
  • 1⁄3 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg , lightly beaten
  • 2 1/4 cups buttermilk
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1/2 cup miniature semisweet chocolate chips (and or or snipped dried cherries, toasted walnuts)
  • whipped cream
  • fresh berries

Directions

  1. In a big bowl, stir together flour, cocoa powder, sugar, baking soda, and salt.

  2. In another bowl combine egg, buttermilk, oil, and vanilla.

  3. Add egg mixture to flour mixture; stir just until moistened.

  4. If desired, stir in chocolate pieces, cherries, and/or walnuts.

  5. For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet.

  6. Cook over medium heat for 2-3 minutes on each side or until pancakes are light brown.

  7. Turn over when surfaces are bubbly and edges are slightly dry.

  8. Serve warm; top with whipped cream and fresh berries.
