Spicy Grilled Chicken Salad

Serves 4 people

Ingredients

  • 1 8 oz can sliced pineapple
  • 3 tbsp veg oil
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp honey
  • 1/4 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 4 chicken breasts
  • 1 tsp pepper
  • 5 c torn lettuce
  • 1 red pepper, julienned
  • 1 small onion, sliced into rings

Directions

  1. Drain pineapples, reserving 2 tbsp juice; set aside.

  2. In jar, combine juice, oil, soy sauce, vinegar, honey, ginger and cayenne.

  3. Shake well.

  4. Brush some dressing over pineapple; set aside.

  5. Sprinkle chicken with pepper.

  6. Grill or broil chicken and cut into strips.

  7. Grill or broil pineapple 2-3 minutes per side.

  8. Assemble salad and drizzle with remaining dressing.
