Moroccan Grilled Salmon

Serves 4 people

Ingredients

  • 1/2 c plain yogurt
  • 1 lemon
  • 1 tbsp EVOO
  • 2-3 garlic cloves, smashed
  • 1 1/2 tsp coriander
  • 1 1/2 tsp cumin
  • (can substitute moroccan seasoning)
  • Salt and pepper
  • 4 salmon fillets (6 oz each)
  • 1/4 c chopped cilantro
  • Parsley for garnish

Directions

  1. Stir the yogurt, lemon juice, oil, garlic and seasoning in small bowl.

  2. Pour half the sauce into plastic bag, cover and fridge remaining sauce.

  3. Add salmon to bag and keep in fridge for 20-30 minutes.

  4. Pre-heat grill to med-high.

  5. Remove the salmon from marinade and blot off excess.

  6. Lightly oil grill.

  7. Add salmon and cook 4-6 minutes per side.

  8. Serve with reserved sauce, herbs, lemon wedges.
