cold sweet potato soup

a good summer soup but kinda labor intensive

Ingredients

  • 1.5 cups vegetable broth
  • 1 yellow or white onion (minced)
  • 1Tbs grated fresh ginger
  • 1 coarsely chopped leak (white part only)
  • 1 whole clove
  • 1 generous pinch cinnamon
  • 1 pinch nutmeg
  • 1 large sweet potato (pealed and diced)
  • 2tsp maple syrup
  • 2 cups evaporated milk
  • 1 tbs corn starch
  • 1 Tbs orange juice

Directions

  1. ur 1.4 cup vegetable broth into a large sauce pan and bring the liquid to a simmer

  2. Add the onion, the ginger, the leak, the clove, and the sinnamon and cook (stirring often) until the vegitabled are soft and the liquid is almost gone. (aprox. 8 min)

  3. add sweet potato and the rest of the broth and simmer.

  4. once simmering, cover the mix and cook till the potato is soft enough to puree.

  5. transfer the mix to the bvlender and puree. then return it to its sauce pan and andd the maple syrup.

  6. in a seperate bowl combinethe corn starch and the milk.

  7. stir that i to the potato mix and heat till thick (aprox. 7 min.)

  8. cool and stir in orange juice before serving.
