Banana Bread

Serves 8 people

Ingredients

  • 1 3/4 cups plain flour
  • 1/2 tsp ground cinnamon
  • 3 tsp baking powder
  • 1/4 tsp bicarb soda
  • 1/3 cup brown sugar
  • 1/2 cup chopped/crumbled walnuts
  • 3 large over-ripe bananas
  • 3 large eggs, lightly whisked
  • 1 tsp vanilla extract
  • 100g margarine, melted & cooled

Directions

  1. Preheat oven to 175C.

  2. Sift flour, cinnamon, baking powder, soda, 1/2 tsp salt, brown sugar & nuts. Combine.

  3. Mash bananas in a separate bowl, then stir in whisked eggs, vanilla extract and melted butter. Line long sides of 11×22cm loaf pan with baking paper and grease ends with left over melted butter.

  4. Fold wet ingredients into dry ingredients with a spatula or wooden spoon, until only just combined (don’t overmix).

  5. Scrape mix into loaf pan. Place in oven and bake for 30 mins. Check loaf and cover with alfoil if top is getting overcooked. Cook for a further 20-30 mins, until a skewer cleanly exits.

  6. Cool in loaf pan for 10 mins, then turn out onto cooling rack carefully.
