Pimento Cheese Spread

Who doesn’t like a cheesy spread!

Serves 8 people

Ingredients

  • 1/2 lb. mild cheddar cheese
  • 1/2 lb. white sharp cheddar cheese
  • 1 large jar diced pimentos, with their juice
  • 1 C. chopped green onions
  • 1/2 C. mayonnaise
  • 2 t. fresh lemon juice
  • 1 clove garlic, minced
  • 1 T. Worcestershire, or more to taste
  • Tabasco to taste
  • 1/2 t. black pepper
  • Crackers or raw vegetables

Directions

  1. Coarsely grate the cheeses. Put the cheese in a mixing bowl and add half the juice from the pimentos; add the pimentos and chopped green onions. Mix well.

  2. Combine the mayonnaise, lemon juice, garlic, Worcestershire, Tabasco, and black pepper and blend well. Add dressing to the cheese mixture. Adjust the seasonings if necessary.

  3. Best served at room temperature with crackers and/or raw vegetables. This is also excellent used as a sandwich spread. The cheese can be kept, tightly covered, in the refrigerator for several days.
