Cheese Strata

Love this for a brunch. You could also add sautéed mushrooms or a diced meat of your choice.

Cook time: 40 minutes
Serves 6 people

Ingredients

  • 2 T. butter, melted
  • 8 slices white bread
  • 1 1/2 C. sharp cheddar cheese, grated
  • 1 1/2 C. Swiss cheese, grated
  • 1 4oz. can mild diced green chilies
  • 4 large eggs
  • 2 C. milk
  • 1/8 t. cayenne pepper
  • 1 t. kosher salt
  • 1/4 t. black pepper

Directions

  1. Preheat oven to 325 °. Butter an 8-inch square baking dish.

  2. Line bottom of the baking dish with 4 slices bread. Sprinkle with half of each cheese. Top with half of the chilies. Layer with remaining bread, cheese and chilies.

  3. Whisk together eggs, milk, melted butter, cayenne, salt, and pepper. Pour mixture into baking dish. Cover; refrigerate at least 6 hours or overnight.

  4. Bake strata until puffed and golden, about 40 minutes. Let stand 10 minutes before serving.
