Crock Pot Chicken Taco Stew

Cook time: 60 minutes
Serves 8 people

Ingredients

  • 1 lb. frozen chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can northern beans, drained and rinsed
  • 1 can pinto or kidney beans, drained and rinsed
  • 1 can sweet or white corn, drained and rinsed
  • 1 can diced tomatoes with chilis
  • 1 pkg. low sodium taco seasoning
  • 3-4 cups low sodium chicken broth

Directions

  1. Place frozen chicken breasts at bottom of crock pot, closest to the heating element.

  2. Mix taco seasoning with broth (3-4 cups depending on how thick you like you soup/stew).

  3. Add remaining ingredients.

  4. Cover and cook on low for 6 hours or high for 1 hour.

  5. After cooking shred chicken in pot and serve.
