Bourbon Balls

Ingredients

  • 4 lbs. confectioners sugar
  • 4 sticks butter (softened to room temperature)
  • 3 Cups chopped pecans
  • 1 (12 oz.) pkg semi sweet chocolate chips
  • 1 (12 oz.) pkg dark chocolate chips
  • 1 stick parafin
  • KENTUCKY Bourbon

Directions

  1. Place chopped nuts in bowl and cover them 3/4 of the way with bourbon. Allow to soak at least overnight.

  2. Mix sugar and butter, add nuts and then chill about 1 hour (at least).

  3. Form into small balls. Chill again for 3 to 4 hours (or overnight — can even place in freezer).

  4. Melt chocolate chips and paraffin in top of double boiler.

  5. Take a plastic fork and break off middle two tines. Place a ball into melted chocolate and use plastic fork to “lift” balls out of chocolate. Place on parchment paper. Chocolate should harden almost immediately.

  6. Can store in freezer or refrigerator.
