Stuffed Croissant French Toast

Ingredients

  • 2 eggs
  • 1 cup milk
  • 2 teaspoons vanilla
  • 12 medium day-old croissants
  • 8 ounces cream cheese , softened
  • 1/4 cup powdered sugar
  • 1 pint strawberry , thinly sliced
  • butter

Directions

  1. In a bowl, whisk together the eggs, milk, and vanilla; pour into a 13 × 9 inch pan.

  2. Slice each croissant almost completely through horizontally.

  3. With a hand mixer, mix together the cream cheese and powdered sugar.

  4. Spread a layer of cream cheese mixture on the inside surface of each croissant.

  5. Place strawberry slices over cream cheese mixture and press lightly to secure.

  6. Close the croissants and place in the 13 × 9 inch pan; soak each side 2-3 minutes.

  7. Melt a little butter in a small frying pan; place croissant in pan; cover and cook 1 minute on each side, or until lightly browned.

  8. Serve immediately sprinkled with powdered sugar.
