Mooncake I

Ingredients

  • 1 cup water
  • 1/2 cup butter or margarine
  • 1 cup flour
  • 4 eggs
  • 2 3-1/2-oz. boxes vanilla pudding
  • 3 cups milk
  • 1 8-oz. pkg. cream cheese, softened
  • 1 8-oz. container whipped topping
  • Chocolate syrup or mini chocolate chips

Directions

  1. In a saucepan, bring water to a boil. Add flour all at once, and stir until mixture forms a ball. Remove from heat and cool slightly. Add eggs, once at a time, beating well after each addition. Spread onto a greased 15×10×1 jelly roll pan. Bake at 400 degrees for 30 minutes. Cool, but do not prick; leave surface with moon-like appearance.

  2. Meanwhile, beat pudding with milk until thick. Add cream cheese; blend well. Spread over crust; refrigerate 20 minutes. Top with whipped topping. Drizzle chocolate syrup over top, and/or sprinkle with nuts and/or mini chocolate chips.
