Courgette and haloumi fritters

Makes 25, can be made in advance and warmed on a baking tray in a medium hot-oven for 5-10 minutes, cannot be frozen

Ingredients

  • 300g (about 6-8) courgettes
  • 1 onion, grated
  • 250g haloumi cheese, grated
  • 75g plain flour
  • 2 tsp grated lemon rind
  • 2 eggs
  • 1 tbsp chopped fresh dill
  • light olive oil, to fry
  • mayonnaise or aioli, to serve

Directions

  1. Coarsely grate the courgettes, place in a sieve, then squeeze out as much liquid as possible. Put in a bowl and add the onion, haloumi, flour, lemon rind, eggs and dill. Season and stir to combine. Form the mixture into 25 bite-size patties. Refrigerate for 30 minutes to firm.

  2. Heat the oil in a frying pan over a medium heat and fry, in batches, for 1-2 minutes each side until golden. Drain on kitchen towel.

  3. Serve the fritters warm with the mayonnaise or aioli and a little sea salt.
