Fruit Swirl Coffee Cake

Ingredients

  • 1 18-1/4-oz. box white cake mix
  • 1/2 cup sour cream
  • 1/3 cup butter or margarine, melted
  • 1 t. vanilla extract
  • 2 eggs
  • 1 21-oz. can pie filling (lemon, apple, blueberry, cherry, peach or apricot)
  • 1/2 cup sour cream white ready-to-spread frosting from can

Directions

  1. Heat oven to 350 degrees. Grease bottom and sides of 15×10 jelly roll pan with shortening. Lightly flour.

  2. Stir dry cake mix, sour cream, butter, vanilla and eggs in large bowl, using large spoon, until dough forms.

  3. Set aside 1 cup dough; spread remaining dough in pan. Spread pie filling over dough in pan. Drop 1 cup dough slightly less than 1 tablespoonfuls onto pie filling.

  4. Bake 25 minutes or until toothpick inserted near center comes out clean.

  5. Microwave frosting in microwavable bowl uncovered on high for 20-30 seconds or until melted; stir. Drizzle over warm coffee cake. Cool 30 minutes. Serve warm or cool.

  6. Can use a milk & powdered sugar icing in place of frosting.
