Oatmeal Cake

Ingredients

  • CAKE
  • 1 1/4 cups boiling water
  • 1 cup quick cooking oatmeal
  • 1/2 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 t. vanilla extract
  • 2 eggs, beaten
  • 1 1/2 cups flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 t. cinnamon
  • FROSTING
  • 1 3-oz. pkg. cream cheese
  • 4 T. butter or margarine
  • 1 3/4 cups powdered sugar
  • 1 t. vanilla

Directions

  1. Pour boiling water over oatmeal. Let stand 15 minutes.

  2. Preheat oven to 350 degrees.

  3. Cream margarine, sugars and vanilla. Add eggs and beat. Blend in oatmeal mixture. Mix dry ingredients and fold into mixture.

  4. Bake in greased and floured 9×13 pan for 30-35 minutes.

  5. For frosting: beat cream cheese, butter, sugar and vanilla at low speed until mixed; then at high speed to blend smoothly.
