Carrot Cake

Best carrot cake ever

Ingredients

  • 2 cups sugar
  • 1 1/2 c vegetable oil
  • 4 eggs
  • 2 cups flour
  • 1 teaspoon salt
  • 1 Teaspoon vanilla
  • 3 cups grated carrots
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 teaspoon soda
  • 1/2 cup chopped nuts
  • 8 oz package creme cheese
  • 1/2 cup butter
  • 1 pound powdered sugar or 2 1/2 cups
  • 1 teaspoon vanailla

Directions

  1. Beat eggs until light. slowly add oil. Beat. Add sugar. Beat. Add flour, spices that have been sifter together. Add carrots as you need for moisture along with the flour mixture. Add vanilla. Bake at 350 degrees for 35-40 minutes. it helps to grease pan then line with waxed paper. Frost when cool

  2. Combine frosting ingredients: creme cheese, butter, powdered sugar and vanilla. whip until right spreading consistancy.
