Biscuits

These are the best biscuits I have ever made. Rich, buttery, flaky, and light, they are incredible either topped with more butter, drizzled with honey, or dolloped with egg gravy.

Ingredients

  • 4 cups flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 1/2 cup butter, frozen
  • 1 3/4 cups milk
  • 1 tablespoon vinegar

Directions

  1. Whisk the flour, baking powder, baking soda, and salt together.

  2. Cut in the shortening with a fork.

  3. Grate (with medium coarseness) the frozen butter into the dry ingredients. Make sure your hands are cold.

  4. Toss mixture well, then stir in the milk and vinegar gently.

  5. Knead dough together, and turn out onto a well-floured surface.

  6. Pat out very thin. Fold dough up like a letter. Continue to pat and fold several more times, handling the dough gently.

  7. Pat dough out to 1" thick and either cut into squares with a floured knife or punch biscuits with a round cutter.

  8. Put biscuits on a greased pan and bake in preheated oven.
