Gingerbread

This gingerbread is moist and spicy. In my mind this recipe is the best I have ever come across.

Ingredients

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger, ground
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup shortening
  • 1/2 cup molasses
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking soda
  • 3/4 cups boiling water
  • 1 large egg, beaten
  • 2 tablespoons fresh ginger, grated finely

Directions

  1. Combine the flour, baking powder, spices, and salt in a medium-sized bowl. Whisk well.

  2. Cream the shortening and brown sugar separately in a small bowl.

  3. In another bowl, beat the molasses and 1/2 teaspoon baking soda well.

  4. Add the molasses to the shortening mixture and beat well.

  5. In a separate bowl, stir together the boiling water and 1/4 teaspoon baking soda.

  6. Add molasses mixture alternately with boiling water to dry ingredients in large bowl.

  7. Fold in the beaten egg and fresh ginger.

  8. Bake at 350 degrees in a greased, floured pan. Eat warm or cold.
