Mom’s Pancakes

These pancakes are the fluffiest, most tender pancakes imaginable.

Ingredients

  • 4 cups flour
  • 2 tablespoons sugar
  • 4 tablespoons baking powder
  • 2 teaspoons salt
  • 2 eggs
  • 2 tablespoons oil
  • 5 cups water

Directions

  1. Whisk flour, sugar, baking powder, and salt together in a large bowl.

  2. In another bowl, beat the eggs, oil, and water together.

  3. Make a well in the middle of dry ingredients and pour in wet ingredients. Immediately whisk rapidly until thoroughly mixed. There should be no lumps left.

  4. Cook pancakes individually on a hot griddle using 1/4 cup of batter per pancake. Serve warm with maple syrup.
