Pumpkin Scones

These are tender, pumpkin-spiced, delicately orange scones.

Ingredients

  • 3 cups flour
  • 1/3 cup sugar
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ginger, powdered
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup butter, cold
  • 2 tablespoons fresh ginger, grated finely
  • 1 cup pumpkin, liquid puree
  • 1 egg

Directions

  1. Whisk flour, sugar, baking powder, salt, ginger, and pumpkin pie spice.

  2. Cut in the butter.

  3. Stir in the fresh ginger.

  4. Stir in gently the pumpkin and egg, adding more liquid if necessary to bring dough together to a soft mass.

  5. Pat dough out into a large circle on parchment paper on a cookie sheet.

  6. Cut dough into 12 slices, like a pie. Pull slices away from each other slightly. Bake at 350 degrees until slightly browned. Eat warm with butter and jam.
