Potato Sponge Bread

This bread is soft and makes excellent sandwich bread. It does take more time due to the sponge method, but the sponge gives it an excellent flavor.

Ingredients

  • 2 cups warm water
  • 3/4 tablespoon fresh yeast
  • 3/4 cup mashed potatoes
  • 6-7 cups flour
  • 2 tablespoons butter, melted
  • 3/4 teaspoon salt
  • 2 tablespoons sugar

Directions

  1. Combine warm water and yeast in a large bowl; stir in mashed potatoes and 2 cups of flour. Combine well, then cover and let sit out overnight.

  2. The next morning, stir in butter, salt, sugar, and one more cup flour.

  3. Knead in the rest of the flour, until dough is smooth and elastic (about 10 minutes). Let rise two hours or until dough has doubled.

  4. Form bread into two loaves and set in greased loaf pans. Cover and rise until doubled once more, then bake.
