Hearty Bean and Sausage Soup

Ingredients

  • 1 pound fresh elk or venison Italian sausage - cut into half-inch slices
  • 1/4 cup olive oil
  • 1/2 cup grated parmesan cheese
  • 1 medium onion - chopped
  • 3 cloves garlic - minced fine
  • 1 can dark kidney beans - with juice
  • 1 can chick peas (garbanzo beans) with juice
  • 1 can white beans - with juice
  • 6 cups (more if needed) beef broth
  • 1/2 cup dry red wine
  • 2 tablespoons dry parsley
  • 1 tablespoon dry sweet basil
  • 1 teaspoon dry oregano
  • 1 teaspoon dry rosemary
  • 1 tablespoon black pepper
  • Salt to taste
  • 1 pound small shell pasta

Directions

  1. In a large soup pot brown the sausage with the onion and garlic.

  2. Next add all the ingredients except for the pasta and let it simmer for 45 minutes.

  3. Now add the pasta and cook for 10 more minutes.

  4. Serve the soup family style with warm Italian bread and enjoy.
