Lamb cutlets with pistachio pesto

Ingredients

  • 100g shelled pistachios
  • 30g fresh white breadcrumbs
  • grated zest of 1 lemon
  • 1 garlic clove, crushed
  • 25g grated Parmesan
  • 15g pack fresh basil
  • 150ml olive oil, plus extra for brushing
  • 6 lamb cutlets, trimmed

Directions

  1. Put the pistachios, breadcrumbs, lemon zest, garlic, Parmesan, basil and olive oil in a food processor and process to a paste. Season with salt and pepper.

  2. Heat a griddle pan to high, brush the cutlets with oil and cook for 3-4 minutes on each side. Serve with the pistachio pesto.
