Chocolate Zucchini Cake

Ingredients

  • 2 cups flour
  • 1/2 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 scant cup sugar
  • 1 teaspoon vanilla
  • 2 teaspoons instant coffee
  • 3 eggs
  • 2 cups grated zucchini
  • 1 cup chocolate pieces

Directions

  1. Whisk the flour, cocoa, baking soda, baking powder, and salt together.

  2. Beat the butter and sugar separately.

  3. Mix the vanilla, instant coffee, and eggs into the butter and sugar.

  4. Toss zucchini and about 1/3 flour mixture together in a large bowl. Add the chocolate pieces.

  5. Add the rest of the flour to the the egg mixture. Stir to combine. Fold the zucchini mixture in.

  6. Pour into a greased, cocoa dusted pan. Bake at 350 degrees until firm on top.
