Vanilla Pudding

Ingredients

  • 5 tablespoons cornstarch
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 2 1/3 cups milk
  • 1 egg
  • 1 tablespoon sugar
  • 1 tablespoon margarine
  • 2 teaspoons vanilla
  • 2 tablespoons cocoa and 2 tablespoons more sugar (for chocolate pudding)

Directions

  1. Combine the cornstarch, sugar, and salt (along with cocoa and extra sugar if desired) in a medium saucepan. Whisk in the milk.

  2. Over a medium flame, stir pudding until thickened.

  3. Beat the egg and 1 tablespoon sugar separately until light.

  4. Pour a little hot pudding over egg. Mix well. Add egg mixture to pudding, whisking carefully in.

  5. Simmer several moments, then add the margarine and vanilla. Bring back to a boil. Turn off and cool before eating.
