Shrimp & Feta Tabbouleh

Serves 4 people

Ingredients

  • 2/3 cups bulgur
  • 1 2/3 c water
  • 1/2 cup fresh lemon juice
  • 12 oz pre-cooked shrimp
  • pinch ground cumin
  • pinch dried mint
  • 3/8 tsp black pepper
  • 1 cup diced cucumber
  • 1 pint grape tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup chopped parsley
  • 2 tbsp olive oil
  • 1/2 cup crumbled feta
  • 1/ tsp salt

Directions

  1. In saucepan, combine bulgur, water and 2 tbsp lemon juice to a boil.

  2. Cover and simmer until tender, about 15 min. Drain and let cool.

  3. Put shrimp in serving bowl. Sprinkle with 2 tbls lemon & 1/8 tsp pepper. Let stand for 5 min

  4. Stir in cucumber, tomatoes, onion, parsley, oil and cheese. Add salt, remaining lemon juice, and remaining pepper and toss.

  5. Stir in cooled bulgur.
